Luncheon Pea Soup
- 1 cup instant mash potato flakes
- 12 cup Italian salad dressing
- 500 g frozen peas
- 400 ml chicken stock
- 120 ml sour cream
- Heat 300 ml water, stir in potato flakes in large pot and cook for 10 minutes.
- Stir in salad dressing and peas.
- Blend soup.
- return to pot.
- add chicken stock and 3/4 tsp pepper.
- boil, reduce heat and simmer for about 15 mins, stirring often.
- stir in sour cream.
