Carrot and onion fritters

  1. In to large mixing bowl, combine all ingredients.
  2. Mix thoroughly.
  3. Form in to small to medium sized patties.
  4. Add half of patties to hot frying pan with small amount of oil covering base of pan.
  5. Fry over medium heat for approx 2-3 minutes each side.
  6. Flattening down patties with spatula as they cook.
  7. Drain on paper towels.
  8. Serve with sauce of choice.
  9. I used mango chutney.
  10. Yum yum!
