Jack & Guac Jibarito

  1. Mix avocado, mayo and garlic until blended.
  2. Heat oil in large skillet on medium heat.
  3. Add plantains; cook 3 min.
  4. on each side or until tender and lightly browned on both sides.
  5. Use slotted spoon to remove plaintains from skillet; drain on paper towels.
  6. Flatten plantains with back of spatula to 1/4-inch thickness; return to skillet.
  7. Cook 1 min.
  8. on each side or until golden brown on both sides.
  9. Remove from skillet; drain on paper towels.
  10. Spread avocado mixture onto 4 plantain slices; top with lettuce, tomatoes, bacon, cheese and remaining plantain slices.
