Arrachera A La Parilla (Grilled Skirt Steak) Recipe

  1. Sprinkle the steaks with lime juice, then salt and pepper them on both sides to taste.
  2. Place the steaks in a shallow dish.
  3. In a small bowl, combine beer, garlic and oil.
  4. Pour marinade over steaks, cover with plastic wrap and marinate 1 hour.
  5. In a grill, build a warm fire (you should only be able to hold your hand above the grate 3-4 seconds).
  6. Place steak on grill and cook 5-7 min per side for medium-rare, or possibly up to 10 min per side for well-done.
  7. The steaks should be crusty but not burned.
