Deep-Fried Whiting

  1. Rinse the whiting.
  2. Drain but do not pat dry.
  3. Heat the oil in a deep fryer to 375 degrees.
  4. Season the flour with salt and pepper.
  5. Put the whiting in the flour, and stir so that each piece is liberally coated.
  6. Shake off excess flour.
  7. Drop a third of the whiting into the oil, and cook about 5 minutes, until the fish is crisp.
  8. Drain on paper towels.
  9. Repeat with the remaining whiting.
  10. Serve with lemon wedges or lemon halves.
