Heart Attack Breakfast
- 3 tbsp oil
- 3 medium popatoes, cubed
- 4 pieces of bacon, cut in 1-inch strips
- 1/2 cup onion, chopped
- 1 salt and pepper to taste
- 6 eggs
- 2 links of chorizo (I use beef)
- 1 shredded cheddar cheese
- Heat 2-3 tablespoons of oil on medium high in a large skillet.
- Add potatoes, bacon, and onion.
- Cook until bacon begins to crisp and potatoes are tender, stirring occasionally.
- Optional: add salt and/or pepper to taste.
- Remove casing from chorizo sausage.
- Add to mixture in skillet, and cook until sausage is done, stirring often.
- (Sausage will harden similar to the consistency of cooked ground beef.)
- Scramble eggs.
- Add to mixture in skillet.
- Turn often until eggs are done.
- Remove from heat.
- Sprinkle mixture with shredded cheddar cheese.
- For Heart Attack Burritos, serve with flour tortillas.
