Grilled Shrimp with Lemon-Herb Sauce

  1. Heat a grill pan over medium-high heat and spray with a little olive oil.
  2. Season the shrimp skewers with a little salt and pepper, to taste.
  3. Grill the shrimp in two batches, cooking for about 1-2 minutes per side.
  4. Dont overcook the shrimp!
  5. Take the shrimp off the pan and set aside.
  6. Combine the sauce ingredients in a mini food processor and blend until everything is finely chopped.
  7. Top the skewers with sauce and enjoy!
