Grilled Shrimp with Lemon-Herb Sauce
- Olive Oil Cooking Spray
- 1- 1/2 pound Large Shrimp, Threaded Onto Skewers
- Salt And Pepper, to taste
- 2 whole Lemons, Juiced
- 1- 1/2 cup Fresh Parsley
- 2 cloves Garlic
- 5 sprigs Fresh Thyme
- 1/4 cups Fresh Chopped Chives
- 1 teaspoon Red Pepper Flakes
- Salt And Pepper, to taste
- Heat a grill pan over medium-high heat and spray with a little olive oil.
- Season the shrimp skewers with a little salt and pepper, to taste.
- Grill the shrimp in two batches, cooking for about 1-2 minutes per side.
- Dont overcook the shrimp!
- Take the shrimp off the pan and set aside.
- Combine the sauce ingredients in a mini food processor and blend until everything is finely chopped.
- Top the skewers with sauce and enjoy!
