Tzimmes (Meat and Vegetables)

  1. Cut the vegetables into 1-inch pieces.
  2. Cut the beef into strips.
  3. Brown the meat in a nonstick pan.
  4. Add the vegetables, prunes, apricots and orange juice.
  5. Add enough water to cover meat and vegetables.
  6. Bring to a boil, lower the heat, and simmer for 2 to 3 hours or until the meat is tender.
  7. Or bake in a 350F (180C) oven for 3 hours in a covered dish.
