Perfect Prime Rib Roast

  1. Remove bone from roast and turn the rack of ribs so that they curve upwards.
  2. This will be a cradle.
  3. Rub roast on all sides, then place roast back on the ribs and tie roast with butcher twine.
  4. Let roast sit on counter for 2 hours
  5. Cook at 500F for 20 minutes uncovered.
  6. Reduce heat to 325F and continue cooking uncovered for an additional 75 mins
  7. When the internal temperature reaches 130F, Remove from oven and let rest for 10 minutes.
  8. This will allow the internal temperature to rise to 135F
