Shrimp with Potatoes and Feta

  1. Put potatoes and water in a 13x9-inch glass baking dish.
  2. To cook potatoes in microwave: Cover with vented plastic wrap and microwave on high 6 minutes.
  3. Stir, cover and microwave 6 minutes longer or until potatoes are just tender.
  4. In conventional oven: Cover with foil and bake in a 350F oven 40 minutes or until just tender.
  5. Drain potatoes, then return to baking dish.
  6. Add 2 teaspoons of the oil, the oregano, lemon peel and 1/4 teaspoon each of the salt and pepper and stir to mix.
  7. Heat oven to 400F.
  8. Toss tomatoes, garlic, remaining 2 teaspoons oil and remaining 1/4 teaspoon each salt and pepper in a medium-size bowl.
  9. Spoon over potato mixture, then arrange shrimp on top.
  10. Bake 15 minutes.
  11. Remove from oven and sprinkle with feta.
