Shrimp with Potatoes and Feta
- 1 1/2 lb. New potatoes
- 1/2 c. water
- 4 tsp. olive oil
- 1 tbsp. chopped fresh oregano
- 1/4 tsp. freshly grated lemon peel
- 1/2 tsp. salt
- 1/2 tsp. Freshly ground pepper
- 4 plum tomatoes
- 1 tsp. minced garlic
- 1 lb. medium-size shrimp
- 2 oz. feta cheese
- Put potatoes and water in a 13x9-inch glass baking dish.
- To cook potatoes in microwave: Cover with vented plastic wrap and microwave on high 6 minutes.
- Stir, cover and microwave 6 minutes longer or until potatoes are just tender.
- In conventional oven: Cover with foil and bake in a 350F oven 40 minutes or until just tender.
- Drain potatoes, then return to baking dish.
- Add 2 teaspoons of the oil, the oregano, lemon peel and 1/4 teaspoon each of the salt and pepper and stir to mix.
- Heat oven to 400F.
- Toss tomatoes, garlic, remaining 2 teaspoons oil and remaining 1/4 teaspoon each salt and pepper in a medium-size bowl.
- Spoon over potato mixture, then arrange shrimp on top.
- Bake 15 minutes.
- Remove from oven and sprinkle with feta.
