Potato and Smoked Chicken Hash
- 2 tablespoons olive oil
- 1 each onions chopped
- 1 clove garlic chopped
- 2 cups potatoes cooked, cubed
- 2 cups chicken smoked, diced
- 1 tablespoon red hot pepper sauce
- 1 teaspoon red hot pepper sauce
- 2 tablespoons milk or yogurt
- 1 x salt to taste
- 3 tablespoons coriander fresh
- Heat oil in non-stick skillet.
- Add onion and garlic; cook gently until tender.
- Add potatoes; increase heat and brown lightly.
- Add chicken and mash together slightly with potatoes.
- Mash in Tabasco sauce and milk or yogurt.
- Season with salt.
- Add coriander.
- Taste and adjust seasonings if necessary.
