Hearty Minestrone Soup

  1. Brown sausage in olive oil.
  2. Add onion, garlic, carrots and basil; cook for 5 minutes.
  3. Add zucchini, tomatoes with liquid, enough broth to cover ingredients plus about 1" extra, cabbage and salt & pepper.
  4. Bring soup to a boil; reduce heat to simmer, cover and cook for 1 hour.
  5. Add beans with liquid, cook another 20 minutes.
  6. Serve with crusty bread.
  7. (Even better the second day!
