Simple chicken and red pepper curry
- 2 tbsp East End madras curry powder
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp garam masala
- 4 clove garlic
- 2 onions
- 450 ml chicken stock
- 3 finger chillis
- 400 grams chicken breast
- 1 red bell pepper
- 2 tbsp coriander
- 1 tbsp tomato ketchup
- Chop up the onions, chilli and garlic.
- Mix the curry powder, garam masala, cumin and paprika in a bowl to create your spice mix.
- Dice the chicken into cubes.
- Add the onions, chilli, garlic, spice mix and chicken to a saucepan, then add the olive oil and 100ml of the stock to make a paste.
- Simmer on a low heat and stir well.
- When the chicken is cooked through, add the ketchup, the rest of the stock and the chopped tomatoes.
- Stir well.
- Cover and simmer on a low heat for 20 minutes.
- Chop up the red pepper and coriander.
- When the curry is ready, stir them in for a minute.
- Serve!
