Simple chicken and red pepper curry

  1. Chop up the onions, chilli and garlic.
  2. Mix the curry powder, garam masala, cumin and paprika in a bowl to create your spice mix.
  3. Dice the chicken into cubes.
  4. Add the onions, chilli, garlic, spice mix and chicken to a saucepan, then add the olive oil and 100ml of the stock to make a paste.
  5. Simmer on a low heat and stir well.
  6. When the chicken is cooked through, add the ketchup, the rest of the stock and the chopped tomatoes.
  7. Stir well.
  8. Cover and simmer on a low heat for 20 minutes.
  9. Chop up the red pepper and coriander.
  10. When the curry is ready, stir them in for a minute.
  11. Serve!
