Beef Enchiladas

  1. Create the Enchilada Sauce mixture using the tomato sauce and the enchilada sauce seasoning packet.
  2. Heat sauce in a medium sized sauce pan on the stove.
  3. Cook the ground beef and season it with the taco seasoning mix according to the directions on the packet.
  4. Once the ground beef is cooked, mix into it the refried beans and the sliced olives.
  5. Spread a thin layer of the enchilada sauce (approx 1/2 a cup) into the bottom of your baking dish.
  6. Take one tortilla and spoon into it approx 1/3 cup of the beef and bean mixture.
  7. Cover the beef and bean mixture with approx 2 tablespoons of the enchilada sauce.
  8. Then sprinkle shredded cheese over the beef/bean/sauce filling.
  9. Roll the tortilla up and place it in the baking dish with the seam down.
  10. Once you have filled your pan with rolled up tortillas, cover the entire dish with the remaining sauce and then cheese.
  11. Bake uncovered at 350F for approx 35 minutes or until heated through and cheese is slightly browned.
