Veg-Lentil Meatball Soup

  1. Place brown lentils in med sized pot - cover with approx 2cm of water.
  2. Bring to boil, then keep on a high simmer for 1 hour Keep kettle of water on the boil to top-up water level as needed.
  3. Place aside to cool slightly.
  4. In a large mixing bowl combine mince garlic powder and salt.
  5. Put aside.
  6. Chop celery, onions and carrots.
  7. Place into a large heavy based pot.
  8. Add tomatoes and stock.
  9. Bring to the boil.
  10. In the meantime, shape mince into meatballs about 1 teaspoon sized.
  11. Once soup is boiling, gently place all meatballs in the soup liquid.
  12. Stir occassionally till meatballs are cooked through.
  13. Drain and rinse lentils, then add to soup.
  14. Simmer soup for around 2 hours, or till onion and celery have 'melted' into soup liquid.
  15. Serve.
