Better Than Fruitcake!
- 3 tbsp melted butter
- 3 tbsp sour cream
- 5 banana's semi soft but not mushy.
- 1 1/2 tbsp malibu rum
- 2 tsp marachino cherry juice
- 2 eggs
- 1/2 tsp lemon juice
- 1 cup peeled/cored diced apples
- 1/4 cup pineapple tidbits well drained
- 1/4 cup raisins
- 20 marachino cherries
- 1/4 cup dried cranberries or craisins
- 1/4 cup dried strawberries or firm fresh strawberries
- 1/4 cup walnut pieces or candied walnut pieces
- 1/4 cup cashew pieces or candied cashew pieces
- 2 cup flour
- 1 1/2 tsp baking soda
- 1 cup sugar
- preheat oven to 350F
- place diced apples and lemon juice in a bowl.
- toss to coat.
- set aside.
- cut pinapple tid bits into 4 pieces and cut cherries into 4 pieces.
- set aside.
- in a bowl places peeled whole banana's, rum, eggs, sugar, cherry juice, butter and sour cream.
- blend with hand mixer until blended but still chunky.
- sift together flour and baking soda.
- mix flour mix into banana mix by hand using a spoon.
- fold in apples.
- place all nuts and all remaining fruits into banana mix.
- and gently fold in.
- grease 2 bread loaf pans very well.
- fill said loaf pans halfway with mix evenly.
- bake on middle oven rack for 1 hour or until thoughrally cooked.. toothpick inserted into center should come out clean.. top should browned.
- cool on wire rack.
- slice and serve!

- makes 2 loafs..
- hint( fruit measurements should be slightly heaping.
