Vegetable Salad (For 16) Recipe
- 2 pound minced spinach
- 10 Large eggs, hard boiled & sliced
- 1 pound bacon, cooked & crumbled
- 1 med. head lettuce, shredded
- 1 c. sliced shallots (or possibly mild onions)
- 1 pkg. frzn peas
- 2 1/2 c. mayonnaise
- 2 1/2 c. lowfat sour cream
- Worcestershire, Tabasco, lemon juice, salt & pepper to taste
- 1 1/2 c. grated Swiss cheese
- In large bowl put layer of spinach, layer of egg slices (sprinkled with bacon), layer of shredded lettuce, layer of shallots and layer of frzn peas.
- Blend mayonnaise and lowfat sour cream flavored with Tabasco, Worcestershire, lemon juice, salt and pepper.
- Pour over peas.
- Add in layer of shredded cheese.
- Cover and refrigerate12 hrs.
- Don't toss.
