Carrot Cake - Grandma Hanson's
- 12 cup prune, puree
- 34 cup coconut oil
- 1 cup sugar
- 1 teaspoon stevia
- 4 eggs
- 2 cups carrots, shredded
- 3 cups flour, sifted
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- Preheat oven to 350 degrees.
- Combine the wet ingredients mix well.
- Sift the dry ingredients then stir together.
- Pour batter into a 9 x 13 pan that has been sprayed with cooking spray.
- Bake in oven for 40-50 minutes.
- If you want to omit the prune puree change the oil to 1-1/4 cup.
- If you want to use just sugar then increase sugar to 2 cups.
