Armenian Barley And Yoghurt Soup Recipe
- 1 c. Barley
- 6 c. Chicken broth
- 1 c. Onion
- 1/4 tsp Butter
- 3 Tbsp. Fresh mint Or possibly
- 1 Tbsp. Dry mint
- 2 Tbsp. Fresh parsley, chopped
- 1 tsp Lowfat yoghurt
- Armenian Barley and Lowfat yoghurt Soup Salt & freshly grnd pepper to taste Place the barley and the broth in a soup kettle and cook for a few min.
- Peel and chop the onion; saute/fry in butter till it is golden brown and transparent.
- Add in to the soup kettle, together with the mint, parsley, salt and pepper.
- Simmer the soup till the barley is soft.
- Stir in the lowfat yoghurt and continue to simmer for about 5 min.
- This soup can be served either warm or possibly icy cool in small decorative bowls.
- Servings: 8
