Armenian Barley And Yoghurt Soup Recipe

  1. Armenian Barley and Lowfat yoghurt Soup Salt & freshly grnd pepper to taste Place the barley and the broth in a soup kettle and cook for a few min.
  2. Peel and chop the onion; saute/fry in butter till it is golden brown and transparent.
  3. Add in to the soup kettle, together with the mint, parsley, salt and pepper.
  4. Simmer the soup till the barley is soft.
  5. Stir in the lowfat yoghurt and continue to simmer for about 5 min.
  6. This soup can be served either warm or possibly icy cool in small decorative bowls.
  7. Servings: 8
