Beefy Pizza Subs
- 1 tablespoon olive oil
- 2 cups sliced mushrooms
- 1 green bell pepper, cut into thin strips
- 1 onion, cut into thin wedges
- 1 large garlic clove, finely chopped
- 1 teaspoon dried basil or 1 teaspoon dried oregano
- 14 teaspoon hot pepper flakes
- 1 12 cups thinly sliced cooked flank steaks (or deli roast beef, cut into strips)
- 34 cup pizza sauce (or tomato pasta sauce)
- salt
- fresh ground black pepper
- 4 crusty rolls
- 6 ounces thinly sliced mild provolone cheese or 6 ounces mozzarella cheese
- In a large skillet, heat oil over medium-high heat.
- Add mushrooms, green pepper, onion, garlic, basil, and hot pepper flakes; cook, stirring, for 5 minutes or until softened.
- Stir in beef and pizza sauce; cook until heated through.
- Remove from heat; season with salt and pepper to taste.
- Cut rolls along one side and open like a book; layer with cheese slices.
- Place on baking sheet under preheated broiler for 1 minute or until cheese melts.
- Watch carefully.
- Spoon beef mixture into rolls and serve immediately.
