Easy Sesame Noodle Salad
- 1 lb fresh Chinese noodles or 12 ounces dry pasta
- 4 ounces fresh snow peas
- 4 ounces carrots (match stick size)
- 4 ounces green onions, julienned (3 - 4 large)
- 2 -3 tablespoons sesame oil
- 2 -3 tablespoons low sodium soy sauce
- 2 tablespoons toasted sesame seeds
- Cook noodles, rinse with cold water and spread on a baking sheet or foil to dry.
- Fill a bowl with ice water.
- Bring lightly salted water to a boil, cook carrots for 1 minute, add snow peas and cook for 1 more minute.
- Remove to ice water then put on a towel to dry.
- Combine noodles and vegetables in a large bowl and toss.
- Add oil, soy sauce, and sesame seeds as needed.
- Toss again and chill.
