SB - Hot Scrambled Tofu

  1. Prep: GREEN ONIONS - Use the white part only and mince, PEPPER JACK CHEESE - Grated.
  2. Cover a large backing sheet with paper towels.
  3. Place the TOFU on the towels in a single layer.
  4. Cover the TOFU with paper towels and pat down until dry.
  5. Discard the paper towels and crumble the TOFU.
  6. Heat the EVOO in a large skillet over medium-high heat.
  7. Add the GREEN ONIONS and cook, stirring frequently, for 3 minutes, or until soft.
  8. Stir in the TOFU and TURMERIC.
  9. Add SALT, PEPPER, and HOT PEPPER SAUCE to taste.
  10. Cook for 2 minutes, or until the TOFU is firm.
  11. Evenly divide among 4 plates.
  12. Sprinkle with CHEESE and PAPRIKA.
