SB - Hot Scrambled Tofu
- 20 ounces silken tofu
- 2 tablespoons extra virgin olive oil
- 4 green onions
- 14 tablespoon ground turmeric
- 12 teaspoon salt
- 12 teaspoon ground black pepper
- 1 tablespoon hot pepper sauce
- 12 cup low-fat jalapeno monterey jack cheese
- 14 teaspoon paprika
- Prep: GREEN ONIONS - Use the white part only and mince, PEPPER JACK CHEESE - Grated.
- Cover a large backing sheet with paper towels.
- Place the TOFU on the towels in a single layer.
- Cover the TOFU with paper towels and pat down until dry.
- Discard the paper towels and crumble the TOFU.
- Heat the EVOO in a large skillet over medium-high heat.
- Add the GREEN ONIONS and cook, stirring frequently, for 3 minutes, or until soft.
- Stir in the TOFU and TURMERIC.
- Add SALT, PEPPER, and HOT PEPPER SAUCE to taste.
- Cook for 2 minutes, or until the TOFU is firm.
- Evenly divide among 4 plates.
- Sprinkle with CHEESE and PAPRIKA.
