Haddock with green sauce
- 2 piece haddock (or any white fish)
- 6 tbsp olive oil
- 1 tbsp all-purpose flour
- 1 tbsp chopped parsley
- 2 garlic cloves
- 300 ml water
- 1 salt
- Clean very well the haddock removing all the flakes.
- Cut it in 4 pieces if it is the whole fillet.
- Put salt on it and save it for later.
- Chop the garlic as thin as you can.
- Heat oil along with the minced garlic in a pan where fit all pieces of haddock in a single layer.
- When the garlic start fried, but without taking color, add flour and stir for a minute, down the fire so you do not reach brown.
- Add parsley and two thirds of the water.
- Stir and cook over medium heat until thickened.
- If the sauce is too thick, add a little more water.
- Place the pieces of haddock in the pan and cook over medium heat for 3-5 minutes for each side
- Serve immediately with the sauce that should be linked and not very thick.
- With the fish is always better not get too much done.
- If there is a bit raw, is left plugged heat 4 to 5 minutes and you're done.
- However if passed, is beyond repair.
