Marilyn's Stuffing
- 12 cup raisins (Jumbo ones can be purchased from a health food store)
- 12 cup frozen apple juice concentrate, thawed
- 12 cup butter
- 2 medium onions, chopped
- 2 minced garlic cloves (buy garlic already minced)
- 1 (16 ounce) package pork sausage
- 2 large granny smith apples, chopped
- 3 celery ribs, chopped
- 1 (8 ounce) packagestuffing croutons
- 3 cups chicken broth
- 2 large eggs, lightly beaten
- 12 cup chopped fresh parsley
- 1 tablespoon chopped sage
- 1 teaspoon chopped thyme
- 14 teaspoon chopped clove
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup chopped pecans (optional)
- 1 (12 ounce) canocean spray jellied cranberry sauce (optional)
- 1 cup chopped cranberries (optional)
- Combine raisins and apple juice, let stand for 2 hours.
- Melt butter in a large skillet over medium heat; add onion and garlic and saute 5 minutes or until tender.
- Add sausage, and cook, stirring until it crumbles and is no longer pink; drain.
- Stir in apples and celery and cook, stirring occasionally (for about 10 minutes).
- Transfer mixture to a large bowl.
- Stir in raisin mixture, croutons, and remaining ingredients until moistened.
- Spoon into lightly greased 13X9 baking dish.
- Bake covered at 350 degrees.
