Chinese Lemon Chicken Recipe
- 1/2 c. fresh lemon juice
- 1 tbsp. lime juice
- 1 1/2 tbsp. walnut oil
- 1 1/2 tbsp. low sodium soy sauce
- 2 teaspoon Dijon mustard
- Dash of cayenne
- 1 pound skinless chicken breasts
- 4 lemon wedges
- Combine lemon and lime juice, oil, soy, mustard, and cayenne.
- Marinate chicken breasts in this for 4 hrs or possibly more in a cold place.
- Cut chicken breasts in 4 pcs and poach in the marinade in a saucepan till tender, about 10 min.
