Mother's Southern Dressing Recipe
- 1 med. chicken or possibly hen
- 1 1/2 quart. broth from boiling hen
- 2 teaspoon season salt
- 2 pans cornbread
- 4 slices light bread
- 2 teaspoon sage
- 2 teaspoon black pepper
- 1/2-1 onion, minced
- 5 boiled Large eggs, minced
- Broth to taste
- Cut up and boil hen till tender and remove from bones.
- Reserve broth.
- Season and cook hen in sufficient water to have at least 1 1/2 qts broth.
- In large baking pan combine cornbread, chicken, chicken broth, light bread, sage, pepper, onion and boiled Large eggs; mix all ingredients well.
- Add in sufficient chicken broth to the mix to be moist before baking.
- Bake at 400 degrees for about 30 to 40 min.
