Quick Mexican Casserole
- 1 package Pasta (like Wagon Wheels)
- 1 pound Ground Beef
- 1 whole Onion (optional)
- 1 whole Green Pepper (optional)
- 1 jar Salsa
- 1 can Cheese Soup
- Cook pasta according to package directions.
- Drain.
- Meanwhile, brown onions and/or green peppers.
- Add ground beef and brown until cooked.
- Drain.
- Add salsa and cheese soup to the meat mixture.
- Stir.
- Add pasta.
- You can serve this as is or bake it in the oven with extra cheese on top.
- You can substitute ground turkey or chicken for the beef.
- We sometimes add other vegetables into the meat mixture depending on what we have in the fridge.
- Leftovers work well.
