Quick Mexican Casserole

  1. Cook pasta according to package directions.
  2. Drain.
  3. Meanwhile, brown onions and/or green peppers.
  4. Add ground beef and brown until cooked.
  5. Drain.
  6. Add salsa and cheese soup to the meat mixture.
  7. Stir.
  8. Add pasta.
  9. You can serve this as is or bake it in the oven with extra cheese on top.
  10. You can substitute ground turkey or chicken for the beef.
  11. We sometimes add other vegetables into the meat mixture depending on what we have in the fridge.
  12. Leftovers work well.
