Mixed Berry Mousse

  1. Dissolve gelatin and sugar in large bowl in boiling water; stir in cold water.
  2. Refrigerate until slightly thickened.
  3. Beat thickened gelatin until light and thick, about 5 minutes.
  4. Reserve half of whipped cream for garnish; fold remaining half into beaten gelatin.
  5. Stir in pineapple.
  6. Line a 2-quart bowl or 6 parfait glasses with ladyfingers; spoon in gelatin mixture.
  7. Refrigerate until set.
  8. Garnish with reserved whipped cream and berries.
