Fragrant Chicken and Squash Soup

  1. First poach the chicken breast for 20 minutes in the stock, this will make the stock more flavoursome.
  2. Take it out and leave to rest.
  3. Then add the squash and simmer quietly for about 10 minutes.
  4. Once the chicken is cool enough to handle cut it into bitesize chunks and return to the soup.
  5. Now add the Lemongrass, shallot, galangal and spring onion and cook for about 3 minutes more.
  6. Just before serving add the chopped chilli and finally sprinkle with the coriander.
  7. Bon apetit!
