Foolproof Sesame Seed and Cheese Grissini
- 150 grams Bread (strong) flour
- 50 grams Cake flour
- 3 grams Dry yeast
- 5 grams Salt
- 5 grams Sugar
- 1 tbsp Olive oil
- 100 ml Warm water (about 40C)
- 15 grams Black sesame seeds
- 15 grams Grated cheese
- Mix the bread flour and cake flour in a bowl.
- Add the salt, sugar, and yeast without letting them touch .
- Combine the warm water and olive oil, and set aside.
- Add the Step 2 mixture to Step 1, and mix with a spatula.
- Knead with your hands until the flour on the sides of the bowls comes off cleanly.
- Divide the dough in half, and mix one dough with the black sesame seeds, and the other with the grated cheese.
- Cover with a tightly wrung out kitchen towel, and let rise for 30 ~ 40 minutes.
- You can use your oven's bread-rising function.
- When the rising has finished, press down with your palm to get the air out.
- Divide the dough into 8 ~ 10 portions.
- Roll out 8 ~ 10 portions of dough into the length of a baking sheet, and arrange them on the baking sheet.
- Bake in the preheated oven for 20 ~ 25 minutes at 200C.
- Do the same with the cheese dough.
- Let cool on a rack to prevent condensation from making them soggy.
