Lemony Chicken Caesar Salad
- 2 tablespoons mayonnaise
- 2 tablespoons fresh lemon juice
- 2 tablespoons parmesan cheese (grated)
- 1 teaspoon Dijon mustard
- 14 teaspoon salt and pepper
- 12 head romaine lettuce
- 1 chicken breast (or sliced rotisserie chicken breast)
- 12 cup crouton
- In a small bowl, whisk together mayonnaise fresh lemon juice, grated parmesan, dijon mustard and salt and pepper .
- Divide the dressing between 2 small containers.
- In 2 larger containers divide romaine lettuce (torn into pieces) chicken breast (cooked) and croutons.
- Top w shaved parmesan.
- Refrigerate the salad and dressing separately for up to 6 hours in advance Toss each salad with dressing just before serving.
