Chicken Or Turkey Strata
- 8 slices whole wheat bread, cubed
- 2 c. skinned, cooked and cubed turkey or chicken
- 1/2 c. finely chopped onion
- 2/3 c. finely chopped celery
- 1 (4 oz.) can diced green chilies (optional)
- 1/2 c. nonfat mayonnaise
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 corn tortillas
- Egg Beaters (equivalent to 3 eggs)
- 1 3/4 c. low-fat milk
- 1 c. low-fat cottage cheese
- 1 can cream of mushroom soup
- Place bread cubes in 12 x 18-inch nonstick pan.
- Combine chicken, onion, celery, chilies, mayonnaise, salt and pepper in medium bowl and spoon over bread.
- Tear tortillas into bite-sized pieces and place on top.
- Combine eggs, milk, cottage cheese and soup in a small bowl and pour over top.
- Cover and refrigerate overnight to allow flavors to blend.
- Preheat oven to 325u0b0 and bake 50 to 60 minutes or until the dish is firm and set.
- Remove from oven and let stand for 10 minutes before serving.
- Serves 8.
