Traditional Veal Milanesas
- 27 saltine crackers, finely crushed (1 cup)
- 2 Tbsp. KRAFT Grated Parmesan Cheese
- 2 Tbsp. finely chopped fresh parsley
- 1 clove garlic, minced
- 1/2 tsp. ground black pepper
- 2 eggs
- 4 thin veal cutlets (1 lb.),1/4 inch thick
- 1/4 cup oil, divided
- 1 cup KRAFT Shredded Mozzarella Cheese
- 1 lemon, cut into 4 wedges Safeway 4 ct For $5.00 thru 02/09
- Mix first 5 ingredients in shallow dish or pie plate.
- Beat eggs in separate shallow dish.
- Dip meat in eggs, then in cracker mixture, turning to evenly coat both sides.
- Heat 2 Tbsp.
- oil in medium skillet on medium-high heat.
- Add meat, in batches; cook 4 min.
- on each side or until done (160F), adding remaining oil to skillet as needed.
- Top with mozzarella cheese.
- Serve with lemon wedges.
