Traditional Veal Milanesas

  1. Mix first 5 ingredients in shallow dish or pie plate.
  2. Beat eggs in separate shallow dish.
  3. Dip meat in eggs, then in cracker mixture, turning to evenly coat both sides.
  4. Heat 2 Tbsp.
  5. oil in medium skillet on medium-high heat.
  6. Add meat, in batches; cook 4 min.
  7. on each side or until done (160F), adding remaining oil to skillet as needed.
  8. Top with mozzarella cheese.
  9. Serve with lemon wedges.
