Pimento Cheese

  1. In a food processor, blend the mayonnaise, onion and hot sauce.
  2. Add the shredded cheese and pulse until finely chopped.
  3. Add the pimientos and pulse until combined.
  4. Transfer the pimento cheese to a bowl.
  5. Refrigerate until firm, at least 1 hour.
