Bow Tie Pasta Salad
- 8 ounces bow tie pasta (1/2 of a 16oz box) or 8 ounces other shaped pasta (1/2 of a 16oz box)
- 13 cup low-fat mayonnaise
- 2 tablespoons cider vinegar
- 2 tablespoons sweet pickle relish
- 14 teaspoon white pepper (to taste)
- 18 teaspoon hot pepper sauce (to taste)
- 4 ounces reduced sodium baked ham or 4 ounces smoked turkey, diced
- 8 ounces cabot 50% reduced-fat cheddar cheese, diced
- 12 medium red bell pepper, finely chopped
- 2 green onions, minced (green and white parts)
- 18 teaspoon mild paprika
- In large pot of boiling water, cook pasta according to package directions; drain in colander, rinse under cold water to cool and drain again.
- Meanwhile, in small bowl, whisk together mayonnaise, vinegar, relish, white pepper and pepper sauce.
- In large bowl, combine pasta, ham, cheese, red pepper and green onions.
- Add mayonnaise mixture and stir to combine.
- Sprinkle top with paprika.
- (If not serving immediately, refrigerate pasta mixture and mayonnaise mixture separately and mix when ready to serve).
