Meatballs With Waikiki Sauce
- 1 small (1/2 cup) onion, finely chopped
- 1 pound lean ground beef
- 1/4 cup plain breadcrumbs
- 1 Land O Lakes Egg
- 1/2 teaspoon seasoning salt
- 1/2 teaspoon pepper
- 2 tablespoons Land O Lakes Butter
- 1 small (3/4 cup) red bell pepper, chopped
- 1 (10- to 12-ounce) jar sweet and sour sauce
- 1 (8-ounce) can pineapple tidbits, undrained
- 2 tablespoons sweetened flaked coconut
- Hot cooked rice or noodles
- Sweetened flaked coconut, if desired
- Heat oven to 400F.
- Combine all meatball ingredients in bowl; mix well.
- Shape meatballs into 24 (1 1/4-inch) balls.
- Place into ungreased 13x9-inch baking dish.
- Bake 15-20 minutes or until center of meatballs are no longer pink.
- Drain off fat.
- Melt butter in 3-quart saucepan until sizzling; add bell pepper.
- Cook over medium-high heat 2-3 minutes or until pepper is softened.
- Stir in sweet and sour sauce, pineapple with juice, coconut and cooked meatballs.
- Reduce heat to medium-low.
- Cook, stirring occasionally, until meatballs are heated through.
- Serve over rice or noodles.
- Garnish with coconut, if desired.
