Meatballs With Waikiki Sauce

  1. Heat oven to 400F.
  2. Combine all meatball ingredients in bowl; mix well.
  3. Shape meatballs into 24 (1 1/4-inch) balls.
  4. Place into ungreased 13x9-inch baking dish.
  5. Bake 15-20 minutes or until center of meatballs are no longer pink.
  6. Drain off fat.
  7. Melt butter in 3-quart saucepan until sizzling; add bell pepper.
  8. Cook over medium-high heat 2-3 minutes or until pepper is softened.
  9. Stir in sweet and sour sauce, pineapple with juice, coconut and cooked meatballs.
  10. Reduce heat to medium-low.
  11. Cook, stirring occasionally, until meatballs are heated through.
  12. Serve over rice or noodles.
  13. Garnish with coconut, if desired.
