Creamy Green Bean Orzo Salad With Buttermilk Chive Dressing
- 2 tablespoons buttermilk
- 2 tablespoons mayonnaise
- 1 tablespoon cider vinegar
- 2 teaspoons snipped fresh chives
- 1 teaspoon sugar
- crushed red pepper flakes (optional, a pinch or two)
- 1 teaspoon Dijon mustard (I used 1/2 teaspoon)
- 12 cup uncooked orzo pasta or 12 cup cavatelli pasta or 12 cup farfalle pasta
- 1 cup diagonally sliced green beans (4 oz haricots verts)
- 1 roma tomato, seeded and cut into strips
- kosher salt, to taste
- fresh ground black pepper
- Whisk together buttermilk, mayonnaise, vinegar, chives, sugar, crushed red pepper flakes (if using) and Dijon in a bowl to dissolve sugar.
- Cook pasta in boiling salted water according to package instructions.
- Add beans during last 2 minutes of cooking.
- Drain pasta and beans; cool to room temperature.
- Add pasta mixture to tomatoes and dressing; toss well until coated.
- Cover salad ; chill until ready to serve.
