Sauteed Summer Squash
- 5 pinches dried oregano
- 4 pinches salt
- ground pepper (8 grinds)
- 3 summer squash
- 12 bunch minced fresh parsley
- 1 minced garlic clove
- 4 fresh minced basil leaves
- 1 12 tablespoons imported olive oil
- Cut summer squash into small, bite-sized pieces.
- Mince up the parsley, basil, and garlic.
- Heat pan to medium heat.
- When pan is heated, pour the cooking oil into it.
- When cooking oil is heated, put summer squash into the pan.
- Let summer squash sit in pan, occasionally flipping it to get each side brown.
- When all 2nd sides are not very brown but a little brown, add the garlic.
- Now add the pepper and the salt.
- Finally add parsley and basil and let sit for 1 minute.
- Remove from pan and let cool for 1 minute because it will be hot.
- Serve and enjoy!
