Blow-Your-Mind Buffalo Burgers

  1. Combine butter, cilantro, parsley, green onion and poblano or jalapeno in a small bowl; mix to combine.
  2. On waxed paper, form mixture into a thick roll, about 1 inch in diameter.
  3. Wrap and freeze.
  4. Shape ground beef into 6 large balls.
  5. Cut frozen butter mixture into six 1/4-inch lengths.
  6. Preheat grill to medium-high.
  7. Make a depression in the center of each meatball.
  8. Place a frozen butter slice in each meatball and seal the meat around it.
  9. Shape into patties about 1 inch thick, taking care to keep the butter mixture covered with meat.
  10. Grill burgers for 6 to 9 minutes on each side, or to desired doneness.
  11. Meanwhile, grill onion and pepper slices until tender.
  12. Place burgers on buns; top with onion and peppers.
  13. Drizzle with blue cheese dressing.
