Apple Almond Coffee Cake Recipe

• 2 x Apples, large, peeled, core , minced
• 1/2 c. Brown sugar
• 1/2 c. Almonds, minced
• 1/2 c. Raisins, yellow
• 1 x Egg
• 1/3 c. Butter or possibly margarine, melted
• 1 tsp Vanilla
• 1 c. Flour, unbleached
• 1 tsp Baking soda
• 1 tsp Cinnamon
• 1 tsp Allspice
• 1/2 tsp Cardamom, grnd
• 1/4 tsp Salt

1. Toss apples with sugar, almonds and raisins.
2. Beat Large eggs with butter and vanilla and stir into apple mix.
3. Combine flour, baking soda cinnamon, allspice, cardamom and salt in a separate bowl.
4. Stir dry ingredients into apple mix only sufficient to moisten all ingredients.
5. Spoon into a greased 8" baking dish and bake in a preheated 350 degree oven for about 45 min.
6. Cold slightly before cutting.
