Suiton Dumpling Soup With Pork
- 150 grams Plain white flour
- 150 to 170 ml Water
- 50 grams Pork
- 1 Carrot
- 1/4 Daikon radish
- 1 Sweet potato
- 1 Green onion or scallion
- 2 pieces Aburaage
- 1 1/2 ladles full MIso
- 1 Soy sauce
- 1 Sugar
- Make the suiton dumplings: Put the flour into a bowl.
- Add the water to the bowl while mixing with chopsticks, watching the texture.
- The batter should be soft enough that it falls off the chopsticks when you life them up; this way the dumplings will be tender.
- Cut the carrot and daikon radish into quarters, then slice into 1cm pieces.
- Slice the sweet potato in the same way, and put in a bowl of water.
- Pour some boiling water over the aburaage to remove the excess oil, and cut up.
- Put some dashi stock in a pan and bring to a boil.
- Add the carrot and daikon radish and simmer for 5 minutes.
- Add the sweet potato, and simmer for 10 minutes while skimming off the scum.
- When the vegetables are tender, add the flavoring ingredients.
- When the soup comes to a boil again, add tablespoons of the suiton dumpling batter.
- Chop up the green onion and add to the pan.
- Ladle into serving bowls and serve!
