Crispy-Topped Creamy Spinach
- 2 pkg. (300 g each) frozen chopped spinach, thawed, well drained
- 1 cup Philadelphia Chive & Onion Cream Cheese Product
- 1/2 cup Kraft Rancher's Choice Dressing
- 2 eggs, beaten
- 1-1/2 cups Cracker Barrel Shredded Double Cheddar Cheese, divided
- 30 Ritz Crackers, crushed (about 1 cup), divided
- Heat oven to 375F.
- Mix first 4 ingredients in large bowl.
- Stir in 3/4 cup cheddar and 1/2 cup cracker crumbs.
- Spoon into 2-L casserole dish sprayed with cooking spray; top with remaining cracker crumbs and cheese.
- Bake 20 to 25 min.
- or until crumb topping is golden brown and cheese is melted.
