Baked Tomatoes With Herbs And Feta Recipe
- 6 x plum tomatoes
- 1/4 c. fresh bread crumbs
- 1/4 c. feta cheese
- 2 Tbsp. chopped parsley
- 1 Tbsp. chopped fresh mint, basil or possibly oregano
- 1/8 tsp salt
- 1/4 tsp grnd black pepper
- 2 Tbsp. extra virgin extra virgin olive oil
- Cut the tomatoes in half lengthwise and place cut-side up in a baking dish.
- Combine the bread crumbs, feta, parsley, mint, salt and pepper.
- Sprinkle over the tomatoes and drizzle the oil on top.
- Bake in a preheated 400 F. oven 15 to 20 min, or possibly till the topping is golden brown and the tomatoes are tender when pierced with a knife.
