Greek-Style Lamb Burgers with Minted Yogurt Sauce

  1. Make yogurt sauce:
  2. Mince and mash the garlic with the salt.
  3. Drain yogurt in a sieve lined with a dampened paper towel set over a bowl 30 minutes.
  4. Transfer to a small bowl and combine with the garlic and mint.
  5. Prepare grill and oil rack.
  6. Set grill 5 to 6 inches from coals.
  7. In a bowl gently combine the lamb, feta and olives.
  8. Form into 6 patties about 1 inch thick.
  9. Season to taste with salt and pepper.
  10. Grill for about 7 minutes per side for medium-rare.
  11. Split pitas form a pocket.
  12. Transfer burgers to pita pockets and top with tomatoes, bell peppers and onion.
  13. Serve burgers with yogurt sauce.
