Hobo Crock Whole Smoked Chicken

  1. LINE a large slow cooker (at least 5 quarts) with a sheet of heavy-duty aluminum foil large enough to completely wrap around the chicken.
  2. PLACE the chicken in the slow cooker and generously coat all sides as well as the cavity with the dry rub.
  3. Place the onion in the cavity.
  4. Pour the bottled smoke over the chicken.
  5. FOLD the foil around the chicken for a snug fit and cover.
  6. Cook on high for 3 to 4 hours or on low for 5 to 6 hours, until the chicken is pull-apart tender and reaches an internal temperature of at least 175F in the thick part of the dark leg/thigh meat.
  7. Carefully Lift the chicken out of the crock.
  8. Let it rest for 10 minutes.
  9. Discard the onion and carve.
