Charred Pepper & Feta Dip
- 3 large red peppers
- 6 ounces feta cheese
- 2 tablespoons pine nuts, toasted
- 1 tablespoon olive oil
- Cut peppers in thirds and remove seeds.
- Place cut side down on cookie sheet.
- Broil until skins are blackened and puffed.
- Place peppers in a covered casserole and let stand for 10 minutes to steam.
- Remove and peel.
- Place all ingredients in the food processor and blend.
- Chill until ready to serve.
- Serve with crackers or fresh vegetables.
