Charred Pepper & Feta Dip

  1. Cut peppers in thirds and remove seeds.
  2. Place cut side down on cookie sheet.
  3. Broil until skins are blackened and puffed.
  4. Place peppers in a covered casserole and let stand for 10 minutes to steam.
  5. Remove and peel.
  6. Place all ingredients in the food processor and blend.
  7. Chill until ready to serve.
  8. Serve with crackers or fresh vegetables.
