Cataract City Shrimp and Scallops with Tropical Salsa Falls

  1. Whisk together cornstarch and 2 tablespoons rum in a bowl.
  2. Add shrimp and scallops, toss to combine well, and soak for 5 minutes.
  3. Heat a saute pan over medium-high heat.
  4. Add clarified butter and heat.
  5. Remove seafood from rum/cornstarch mixture and saute until tender.
  6. Add scallions, mango and pineapple chunks and saute for an additional 2 minutes.
  7. Remove the pan from the heat and carefully deglaze with rum.
  8. Return to the heat and cook until alcohol is burned off.
  9. Add pineapple juice and coconut milk.
  10. Simmer for 3 minutes.
  11. Season with sea salt and freshly ground pepper.
  12. Garnish with toasted shredded coconut.
  13. Finish plate decoration with Tropical Salsa Falls.
  14. Combine all ingredients and set aside to let flavors "marry."
