Cheesy Potato and Herb Waffles

  1. Spray electric waffle iron with cooking spray.
  2. Heat iron to medium heat.
  3. Meanwhile, combine first 3 ingredients in large bowl.
  4. Whisk egg, milk and oil in medium bowl until blended.
  5. Add to flour mixture; stir just until blended.
  6. (Do not overmix.)
  7. Stir in potatoes and parsley.
  8. Pour amount of batter directed by manufacturer onto grids of waffle iron.
  9. Close lid quickly.
  10. (Do not open until waffle is done.)
  11. Cook according to manufacturer's directions.
  12. When done, lift waffle off grid with fork.
  13. Repeat with remaining batter.
  14. Serve topped with syrup.
