Roasted Red Pepper-Feta Crostini

  1. Cut off pointed end of garlic bulb, place on a piece of aluminum foil, and drizzle with 1 tablespoon olive oil.
  2. Fold foil to seal.
  3. Bake at 425F for 30 minutes; cool.
  4. Squeeze pulp from garlic.
  5. Process garlic pulp, 2 tablespoons olive oil, beans and next 4 ingredients in a food processor until smooth.
  6. Add half of cheese, and pulse 5 or 6 times.
  7. Cut bread at diagonal, into 24 (1/4 inch) slices.
  8. Arrange on baking sheet, brush with remaining 2 tablespoons olive oil.
  9. Spread 2 tablespoons bean mixture on 1 side of each bread slice, and sprinkle bread slices with rest of feta.
  10. Bake at 350F for 5-7 minutes.
