Skinny Slow Cooker Balsamic Chicken
- 4 pieces Bonesless, Skinless Chicken Breasts'
- 1 whole Medium Onion, Thinly Sliced
- 2 teaspoons Fresh Spicy Oregano, Chopped
- 2 teaspoons Fresh Basil, Chopped
- 2 teaspoons Fresh Rosemary, Chopped
- 1/2 teaspoons Fresh Lemon Thyme, Chopped
- 1/2 teaspoons Sea Salt
- 1/2 teaspoons Pepper
- 4 cloves Garlic, Pressed Or Finely Chopped
- 1/2 cups Balsamic Vinegar
- 29 ounces, weight Canned Diced Fire Roasted Tomatoes
- Put a slow cooker liner in the slow cooker.
- If you are not using a slow cooker liner be sure to spray the base of the slow cooker well with a non-stick cooking spray.
- Add chicken breasts into the slow cooker.
- Put sliced onion on top of chicken then put in all the fresh herbs, salt, pepper and pressed garlic cloves.
- Pour in vinegar and top with tomatoes.
- Cook on low for 8 hours.
- Shred the chicken and serve over pasta, brown rice or quinoa.
- Serve with a simple green salad.
