Skinny Slow Cooker Balsamic Chicken

  1. Put a slow cooker liner in the slow cooker.
  2. If you are not using a slow cooker liner be sure to spray the base of the slow cooker well with a non-stick cooking spray.
  3. Add chicken breasts into the slow cooker.
  4. Put sliced onion on top of chicken then put in all the fresh herbs, salt, pepper and pressed garlic cloves.
  5. Pour in vinegar and top with tomatoes.
  6. Cook on low for 8 hours.
  7. Shred the chicken and serve over pasta, brown rice or quinoa.
  8. Serve with a simple green salad.
